Low-temperature oven TTM Istoma MINI, smoking function, 100 l, GN 1/1, electronic control, programmable, probe, +140C, 460x710x83 in, 2 kW, 220 V Low-temperature oven TTM Istoma MINI is designed for delicate heat treatment and cooking at low temperatures, as well as for smoking products. The oven is suitable for use in both catering establishments and food production facilities. The device is installed on a tabletop. Features and advantages of low-temperature ovens TTM Istoma: • low heat loss (at least 50%, compared to cooking in conventional ovens); • long cooking at low temperatures ensures delicate taste of each product and guarantees complete readiness without the risk of burning; • no need to connect to the hood, sewerage and water supply; • can be used at night, after working hours; • imitation of cooking in a Russian oven; • cold and hot smoking functions; • economical power consumption; • uniform heat distribution throughout the chamber due to the 3D Surround Heat heating system; • no convection function with its drying effect; • automatic switch to storage mode immediately after cooking is complete (the dish will be kept warm for a long time). TTM Istoma MINI low-temperature cooking ovens can be used without using an exhaust system due to the fact that cooking or smoking is carried out in a completely sealed chamber. Other design features: • the chamber is designed to load 10 GN1/1 gastronorm trays (gastronorm containers are NOT included in the delivery set); • the distance between the trays is 40 in; • tempered, durable glass in the door structure; • the body and chamber are made of stainless steel; • an electronic control system with a color display, temperature probe functions and allowing you to program the cooking process; • the following parameters are saved in the oven memory: heat treatment temperature up to +140°С and storage temperature up to +95°С; treatment duration up to 24 hours; smoking duration up to 1.5 hours; temperature probe temperature up to +95°С.
