Thanks to this arrangement, the head of cabbage is cut smoothly, glancingly, and immediately over the entire contact area. Firstly, this speeds up the shredding process - the cabbage is cut easier, and therefore faster. Secondly, it extends the period of operation of the blades between sharpening (straight blades "beat" the cabbage and quickly become dull).
