Proofing allows the products to “rise” increasing in volume by about half their size. In addition, during proofing, carbon dioxide is almost completely removed from the dough and the porosity of its structure changes. Proofing cabinet Voskhod Briz-322 is designed for one-time proofing of large batches of bread and small-piece products. Its operation is optimal in large-scale production facilities and in establishments where baking is put on stream. The Breeze-322 proofing cabinet manufactured by the Russian company Voskhod operates using rack trolleys that are rolled into the chamber space. This system of operation allows for the placement of all products on baking sheets and their prompt loading into the chamber space using a trolley, minimizing heat loss. The Voskhod Breeze-322 thermal proofing cabinet has the following design features: • two cabinet doors and a front panel are made of stainless steel; • the roof, back and side walls are made of plastic, collapsible sandwich panels; • the cabinet has a built-in climate control device - a device that controls the maintenance of specified temperature and humidity parameters in the chamber; • air heating elements are distinguished by increased power, which reduces the chamber heating time; • the cabinet has a built-in steam generator that automatically controls and maintains the required water level; • the door is equipped with a silicone seal, which is attached to it using a special section profile; • the height of the doors, as well as the degree of their fit to the doorway, are adjusted using hinges; • Eliwell brand control system devices allow you to set and maintain humidity and temperature in the working chamber; • the START and STOP buttons are used for emergency shutdown (and subsequent switch-on) of the cabinet in case of power failures; • several Voskhod brand proofing cabinets can be installed next to each other with a minimum gap between the walls of the cabinets (5 cm); • access to the maintenance area is located from the front. The Voskhod Briz-322 baking proofing cabinet is supplied disassembled. The design is easy to assemble due to the simple structure of the sandwich panels of the cabinet. The cabinet can be used together with the TS-1, TS-2, TS-7, TS-8, TS-9-KZ rack trolleys.
