The oven accommodates 6 baking trays measuring 600x400 in. The chamber lining and the outer body trim are made of stainless steel. Oven design features: • increased distance between adjacent baking trays (at least 90 in), which allows you to bake not only small-piece items (cake bases, buns, rolls, pretzels and croissants), but also larger-sized items (for example, fluffy muffins); • 3 built-in systems (injection steam humidification, emergency steam removal and efficient ventilation of the baking chamber) ensure uniform baking of each product; • the door is made of durable glass for easy visual control; • the lighting system installed in the chamber serves the same purpose; • the door has double glazing: there is an air layer between the inner and outer glass, which serves to cool the outer glass. Its overheating is completely excluded, which means that the staff is protected from getting burns when touching the glass; • the inner glass is characterized by high heat-reflective properties, which guarantees reduced heat loss; • a sealing layer in the form of a silicone rubber profile is fixed between the chamber and the door, which creates protection against leakage of the steam-air mixture; • the inner glass has a movable structure; it opens for easy hygienic cleaning; • support legs are included in the convection oven kit; • installation is possible on the surface of a stand or production table.
