The convection system ensures rapid acceleration of hot air from the heating elements throughout the chamber. The steam humidification system allows you to humidify the heated air, thereby providing ideal conditions for preparing dough products. Air humidification is carried out by manually injecting water into the chamber (using a special button). Getting into the chamber with hot air, the water instantly turns into a vaporous state, and the convection system fan quickly distributes the resulting steam throughout the chamber. The water injection function into the chamber can be used during the heat treatment of bakery and confectionery products. Side dishes and main courses can be prepared without humidifying the air, exclusively by dry heat treatment. The Inoxtec OV4F-B convection oven has an electromechanical control system. All operating settings are set manually.
