Convection oven UNOX XEBC-10EU-GPR (gas), 30-260 °C, 10 levels, GN 1/1 gastronorm containers, electronic control panel, 860x957x1163 in, 22 kW The convection oven UNOX XEBC-10EU-GPR (gas) is used in the kitchens of restaurants, canteens, cafes and many other catering establishments for preparing a wide range of dishes, as well as confectionery and bakery products. An oven of this model can be successfully used on the territory of large enterprises, where the release of dough products is put on stream. The oven provides consistently high productivity, which will make it possible to easily predict daily production rates. The reliably made and assembled design of the convection oven from high-quality materials serves as the best guarantee of reliable and uninterrupted operation. Distinctive features and obvious advantages of the model: • the oven has a "smart", programmable control system, providing many unique functions; • the oven chamber holds exactly 10 baking trays measuring 600 x 400 in; • the baking trays are equidistant from each other by 75 in; • the model is equipped with electronic control, lighting by means of an external LED lamp and C-shaped guides with serrated niches; • the internal opening glass makes cleaning easy and ensures maximum hygiene; • the chamber with rounded corners is made of AISI 304 stainless steel, the guides are made of profiled steel, the door lock is made of high-strength self-lubricating technopolymer, the internal pin of the door handle is made of carbon fiber; • the equipment must be connected to the water supply network (3/4″ valve). The model is supplied with: • 4 plastic holders, • a set for connection to the water supply network (water supply hose, mechanical filter and 3/4 non-return valve), • a Starter Kit (8 screws, a wrench and a sticker). Baking sheets are not included in the convection oven kit and must be purchased separately. The following baking modes are available: • convection mode at an air temperature in the chamber from +30 to +260 °C; • convection and steam mode at an air temperature in the chamber from +35 to +260 °C and a humidity level from 30 to 90%; • convection and steam mode at an air temperature in the chamber from +35 to +260 °C and a humidity level from 10 to 20% • steam mode at an air temperature from +35 to +130 °C and a humidity level of 100% • convection and dry air mode at a chamber temperature from +30 to +260 °C and a humidity level from 10 to 100% • baking with a temperature sensor and the DELTA T function; • preheating mode at a maximum temperature of +260 °C. Other distinctive features of the control and programming system: • a MULTI.Point temperature sensor with 4 points for determining the temperature inside the product is provided; • the MIND.Maps™ system provides a graphic representation of the cooking processes,which consist of an infinite number of steps; • it is possible to save at least 256 user programs; • it is possible to assign a name and an image to the saved programs; • it is possible to save recipe names in any language; • the CHEFUNOX system provides a choice of cooking modes, degree, size and cooking result; • the MULTI.Time system provides baking of different dishes located in the chamber at the same time using up to 10 timers; • the MISE.EN.PLACE system guarantees synchronization of loading of different products for cooking at the same time. Air distribution in the chamber is supported by AIR.Maxi™ technology, which has the following distinctive features: • the fans are equipped with a reversible movement system; • there are 4 programmable air flow speeds set by the operator; • there are 4 programmable semi-static fan positions set by the operator. Features of the climate control system in the chamber: According to DRY.Maxi™ technology: • a function of rapid removal of humidity from the chamber is provided, which can be set by the operator; • it is possible to bake with the removal of moisture at temperatures ranging from +30 to +260 °C; With STEAM.Maxi™ technology: • baking can be done with steam at temperatures ranging from +35 to +130 °C; • it is possible to combine baking in the “convention + steam” mode at temperatures ranging from +35 to +260 °C. With ADAPTIVE.Cooking™ technology: • it is possible to optimize the baking process and automatically adapt the operating parameters; • the same cooking result is guaranteed with both full and partial chamber loading; • the chamber is equipped with a humidity sensor and automatic climate control. Thermal insulation and safety are ensured by Protek.SAFE™ technology: • maximum efficiency and safety during operation are guaranteed (the outer surface of the oven and the door glass do not heat up); • to avoid heat loss and save energy, the motor is braked when the door is opened; • it is possible to modulate the gas power taking into account the effective need; • triple glazing of the door (Protek.SAFE™ PLUS technology) guarantees high-quality ventilation between the glasses and prevents excessive heating of the outer glass. Features of the gas heating system: • the oven is equipped with atmospheric burners operating using Spido.GAS™ technology; • the oven can work with the following types of gas: G20 / G25 / G25.1 / G30 / G31; • the heat exchanger system is equipped with straight high-efficiency pipes for symmetrical heat distribution and the ability to quickly replace.
