These methods of heat treatment can be used separately or in combination. Bakery cabinet Abat RPSh-16-2/1M is equipped with an injection steam generation system. Water splashes are sprayed directly onto the heated heating elements installed inside the chamber, after which a large amount of steam is instantly generated. The Abat RPSh-16-2/1M rotary bakery cabinets have the following operating modes: • preheating mode; • convection mode, or dry heating (maximum temperature - up to +270°C); • combined mode (periodic steam injection + constant heating at any temperature up to +270°C); • program mode. An exhaust hood is located above the door of the working chamber, the main task of which is to ensure efficient and maximum rapid suction of air flows when opening the door at the end of the working cycle. The exhaust hood fan turns on and starts working automatically when the chamber is depressurized and the door is opened.
